It’s Truffle Thyme at Bacchus!

Unearth this flavour-filled gift from the land for a limited time

 

When the mercury falls, foodies around the country know it’s Truffle Time. To celebrate this earthy, rich, flavour-filled culinary enigma, Bacchus Restaurant has announced the return of its acclaimed Truffle Degustation.

 

Truffle season in Australia is very limited. Bacchus uses Black Australian truffles Oak Valley Truffles - Manjimup; they take a dish from delightful to decadent, from fulfilling to a full-on flavour festival – definitely a bucket-list experience for all foodies!

 

Available from Wednesday July 3, The Truffle Degustation is $159 per person ($229 per person with paired wine) and features truffles in every dish; including;

 

  • EGG – a dish of 62 Degree Sous Vide Egg, Potato and Almond
  • RISOTTO – with Acid Butter, Parmesan, Dry Yeast
  • EYE FILLET – with Burnt Leek and Hazelnut
  • TRUFFLE ICE CREAM – Porcini and Chocolate

 

What’s even better? The Bacchus team have created a TRUFFLE THYME ELIXER as a cocktail-match! The combination of truffle-infused vodka, Pavan liqueur, pear juice, lemon, and thyme honey simple syrup creates a cocktail with layers of flavor:

 

  • Truffle Infused Vodka: Provides a rich, earthy depth that is the centerpiece of the cocktail.
  • Pavan Liqueur: Adds a floral sweetness that complements the truffle's savory notes.
  • Pear Juice: Offers a fruity sweetness and subtle tartness that enhances the overall complexity.
  • Lemon: Provides brightness and acidity, balancing the sweetness and adding a refreshing citrus note.
  • Thyme Honey Simple Syrup: Infuses herbal and savory undertones that harmonize with the truffle's earthiness.
